Caroline’s Food Services rolled out the Chesapeake Blue Catfish Sandwich on the lunch menu in all schools today.

"It has been a long, extensive group effort to finally bring these catfish cakes to a Caroline student's lunch tray," said Supervisor of Food Services Beth Brewster. "We had to make sure we had the perfect blend of ingredients to satisfy students, while meeting the nutritional requirements."

Kristi Conti, Nutrition Specialist and Project Manager for the school system, explained that creating a recipe from scratch is no easy feat, and that this one in particular took years. She added, "It's been in the development stage for a long time, so we are thrilled to see students now enjoying the final product."

In addition to the locally sourced catfish, the meal included hydroponic lettuce, zucchini and cantaloupe, all locally grown. According to the cafeteria staff, this Colonel Richardson Middle School student said it was the best school lunch she’d ever eaten, and backed that up with a thumbs up.
